Brewing and Beer
On this Summer Abroad program, you can:
- Earn 6 quarter units in 4 weeks.
- Enroll in UC Davis courses to fulfill degree, major, minor, or GE requirements as listed in the General Catalog.
- Experience academic coursework enriched by both the program’s location(s) and activities.

The instructor provides a term-specific program syllabus to enrolled students. The program syllabus and schedule, including the daily itinerary and planned activities, are subject to change at the discretion of the instructor.
The Learning outcomes will be (i) an understanding of the agricultural industries in producing barley and hops and how those industry have significant positive of rural communities, (ii) an understanding of the logistics of storage and transport of the raw materials, (iii) an understanding of the malting and brewing processes and how raw material quality and processing influences quality, (iv) an understanding of product development in meeting new market trends (eg non-alcoholic beer), (v) understanding of planning and executive of year long production schedules and (vi) an understanding of how large and small companies undertake sustainable practices and (vii) an understanding of how these companies implement DEI policies.
Instructional models will include daily briefing and discussions prior to any industry visits, behind the scenes industry tours with key personnel, interactive sessions with students from KU Leuven (Leuven), VLB (Berlin) and TUM (Munich), visits to culturally significant places in Belgium and Germany. Students will be assessed on their understanding and knowledge with weekly quizzes.
Class Format
The course will be a combination of lectures in the morning and excursions in the afternoon. Guest lecturers will enhance your learning experience.

You will enroll in the course set below. Auditing is not an option. UC Davis programs are academic programs so participants should expect a substantial amount of course work.
- Food Science and Technology (FST) 3. Introduction to Brewing and Beer (3 units)
Basic description of brewing and associated processes, from raw materials to final product; history of brewing and brewing science; types of beer worldwide; world beer markets; basics of beer quality, including wholesomeness; role of scientist in brewing. GE Credit: SE; SL
- Food Science and Technology (FST) 98. Directed Group Study (3 units, Pass/No Pass, grading only)
- This course includes participation on excursions and tours and attendance to guest lectures. Students are often asked to write reflective pieces. Assignment topics vary by program. GE Credit: SE.
